So you have opened a hotel, it is successful, your room occupancy rate is high and the risk you took all those months ago is looking like it has paid off. So what do you do now? Resting on your laurels is not an option. You need to increase the profitability of you hotel and there are a number of ways to do this.
One of the easiest things to do and with one of the highest profit margins is a surprisingly simple idea. It won't necessarily even cost you anything in financial outlay -great for the all-important cash flow. A crepe machine is a fantastic way to increase revenues and bump up those profits.
How Does it Work?
A reputable manufacturer can supply a professional quality crepe machine to you free of charge. Then, on the proviso that you buy the crepe ingredients from the supplier, the machine is yours to use and generate more income.
A high-quality crepe machine supplier should also provide you with high quality crepe ingredients. Just be sure to check the ingredients list on your crepe flour mix. Some suppliers use bleached flour, GM modified ingredients and all sorts of nasties that you wouldn't necessarily want in a high-end hotel kitchen. Speak to a few suppliers and make sure that you understand what is going into the mix.

Allergy Free Chanuka

Who doesn't love sizzling latkes? These Chanukah potato delicacies are devoured by the dozen during Chanukah. What about Sufganiyot, those deep fried donuts infused with sticky jelly? How about a game of dreidel and sweet chocolate "gelt"? Each of these Chanukah classics poses allergy risks. Learn how to find allergy friendly versions of these holiday goodies.
Most latke recipes call for eggs and wheat flour. These two ingredients are in the top eight of the most common food allergens. The bad news is that many latkes will be off limits to those with these allergies. The good news is that you can make fabulous latkes without wheat or eggs. A quick search for gluten free vegan latkes will yield many mouth watering recipes.
Latkes can be made quite easily without eggs. They may be a little denser but they'll have all of the great latke flavor from the onions, potatoes, salt, and oil. Since most recipes only call for a minimal amount of wheat flour you can easily omit this ingredient as well.You can also add more interest (and nutrition) by adding grated carrots, sweet potatoes, or zucchini to the latke batter.
If making latkes from scratch isn't an option, there are a few lines of packaged gluten and eggfree latkes. Look for them in the refrigerator or freezer case of your kosher grocery.
An additional note of caution about latkes, beware of the sour cream. Dairy sour cream is off limits for the milk allergic but non-dairy soy sour cream would be perfect.

Grilled Steak Chili Recipe with Coffee and Dark Chili Chocolate
As we are still enjoying the remaining yields of harvest time, the cooler air of November makes us yearn for comfort foods and memorable times with friends and family. As food lovers we were in our glory during October due to the fact that the month has the honor of being National Chili month. This month might officially be over but our desire to make and consume some deliciously warm chili will certainly last well into the coming months!
There's nothing quite like the aroma, texture and taste of a great bowl of hearty and soul warming chili!
First, a mercifully brief bit of history. Chili is believed to have originated in Mexico and literally translates to "chili pepper" in Spanish. However, it didn't take very long at all for the U.S. to adapt this versatile and irresistible new dish. American settlers combined dried beef, suet, dried peppers, and salt and then boiled it in pots along the trail.
Chili quickly gained popularity through the U.S and restaurants started branding their unique blends of meat, spices and herbs as their own "secret recipe." This is what makes chili so unique. Chili's inherent quality of individual customization is what makes it wildly popular at food competitions and chili cook-offs. harvest festivals and ultimately enjoyment at home.
While there are thousands of variations, one of my favorite chili recipes includes heartily grilled, luscious and caramelized steak, spicy jalapeƱos, chipotle and two extra special ingredients; coffee and dark chocolate. Chocolate gives the chili additional depth of flavor while Coffee is the perfect ingredient to round out the dish and add some depth. In fact the bitterness of coffee will help bring out the sweetness of the meat.
Steak Chili Recipe
Ingredients
  • 1 1/2 lb. sirloin steak, cut into 3/4 inch cubes
  • 2 Tbsp. cooking oil
  • 6 cloves garlic minced
  • 1 Vidalia or sweet white onion, diced
  • 2 jalapeƱos minced (or for a smoked flavor, you can substitute with chipotle peppers... whatever fires you up!)
  • 1 cup dry red wine
  • 2 cans (15 oz or 200 mg each) crushed or diced tomatoes
  • 1 cup of beer, stout or lager
  • 2 Tbsp. chile powder
  • 1 teaspoon ancho chile powder (if available, otherwise use an additional teaspoon red chile powder)
  • 2 teaspoons dried basil
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
